Coconut Chicken Curry

1 lb boneless, skinless chicken breast (about 2 large breasts)
               1 ½ tablespoons vegetable oil
2-3 tablespoons curry powder (depends on how spicy you want it)
               1/2 onion, thinly sliced
               2 cloves garlic, crushed
1 (14 ounce) can coconut milk (NOT light)
1 (14.5 ounce) can stewed, diced tomatoes
               3 tablespoons sugar
1 tablespoon lime or lemon juice
               2 tablespoons flour
1 red pepper, cut into pieces
1 potato, skinned, cut into pieces
               salt and pepper to taste

Dice onion & cut up chicken. Season chicken pieces with salt and pepper. Heat oil in a large skillet over medium-high heat for two minutes. Add curry and mix thoroughly. Let flavors meld for an additional 5 minutes, stirring occasionally. Stir in onions, garlic, and flour, and cook 1 minute more.  Add chicken, tossing lightly to coat with curry oil. Reduce heat to medium, and cook for 5-7 minutes, or until chicken is mostly cooked through. Transfer mixture to a heated crock pot. Add coconut milk, tomatoes, sugar, potato, lime juice, and red pepper and stir to combine. Cover and cook on low 4-5 hours.   Serve over jasmine or basmati rice.

Chloe Pics

Chloe's hair gets compliments everyday!  Her hair naturally sticks straight up. She loves to smile and she can actually laugh now, not a weird cough laugh.

I'm Crafty

I learned how to crochet baby hats.  So I made this cute berry colored hat for Chloe.  I just had to brag that I made something, it didn't take forever, and it hasn't fallen to pieces.

Good Book

                                   imgres.jpg

I just finished reading Sarah's Key.  This is a great, moving book about French Jews during the Holocaust.  I don't have a lot of time to read, but this book was worth it.

Our Happy Baby

Chloe has always tried to shove both of her hands in her mouth at the same time and since she can't, she gets very frustrated. Well, now she has figured out how to suck BOTH of her thumbs at the same time and this makes her very happy.

Chloe often falls asleep in her carseat and can sleep through anything. We felt really bad when we uncovered her and saw that her face was covered by her headband. But she was still as content as can be.

Trying Something New

Recently I was speaking with my brother, Nathaniel.  I told him that I have the cutest baby in the world.  He told me that he could not agree with my statement because he did not have pictures of her.  Therefore, I am creating this blog so that the world will not be deprived of my child's beauty.  And yes, I seem to be one of those crazy parents that thinks their child is perfect, amazing, and a genius.

Chloe was born October 29th.  We call her our little pumpkin.  She is three days old in this picture.

Just getting cuter!  One month old at Thanksgiving.

 Two months old at Christmas.

In her blessing dress at the beginning of January. We are dang proud of ourselves because we found this dress at a thrift store for $3.
